This recipe comes from one of our reporters, Jill Kulewsky. Jill says, “I’m not the greatest cook, but I truly love to bake when I have time. This is my favorite cookie recipe, they are nut roll cookies. The pastry dough is very light and flaky. If someone is having a party, this is what they ask me to make. They are really good and everyone raves over them!”
Jill’s Famous Nut Roll Cookies
1 Cup of butter
8 oz brick of cream cheese
2 large egg yolks (save egg whites for nut filling)
2 1/4 Cups flour
Cream the butter and cream cheese together. Add egg yolks one at a time. Mix in flour. Divide dough and flatten out into two discs. Place discs in plastic wrap and refrigerate overnight.
2 egg whites
1 Cup of sugar
1 lbs of ground walnuts or pecans
Beat egg whites until white and marshmallow-like, adding sugar a little at a time until dissolved. Stir in ground walnuts.
Remove dough from refrigerator and roll out using powdered sugar. Cut dough into 2-inch squares and fill each square with nut filling. Carefully roll dough over the nut filling and pinch ends and tuck underneath. Roll cookie in bowl of sugar, place on cookie sheet and bake at 350 degrees for 15 minutes.
